Spring has arrived and it goes hand by hand with fresh, green, and vibrant food. Perhaps the nice warm weather outside is fueling me to get into the kitchen and start dancing salsa with new dishes, metaphorically speaking of course. One of the facts about cooking that I enjoy the most is that cooking does not begin into the kitchen, the whole process might take a couple of days. Since coming out with an idea, to gathering the products; I find the whole process relaxing and a perfect system of ¨retroalimentación¨, as we say in México. The literal meaning of such concept is ¨Feedback¨, but I am not satisfied at all with this word, I feel much of its meaning is geting lost in translation. You can get ¨Retroalimentación¨ out of almost every positive activity you realize, let it be a sport or in this case dicing and chopping. While helping you to understand the importance of patience and sharing and it gives you motivation to create new things, for instance, and in the long term it cooperates in the whole process of becoming a better individual. ¨Retroalimentación¨, funny concept to translate. Back to the kitchen. As I was saying it is nice outside and it makes me to start craving for something fresh and easy to make. After a ¨Vietnamese Cuisine¨class I had Thursday I came out with the idea of giving the rolls a little personal touch and spice things up a little bit. The result looks just like this:
